If you are a lover of fruity, wild, intense dry processed coffees, do not pass up a chance to try this amazing coffee grown in the Dara region of Sidamo in Ethiopia. It’s grown in the highlands at 2000 meters by small holder farmers who are paid a premium to pick only red (ripe) cherries. Selective picking of ripe cherries may be the single most important factor in producing great coffee. This is particularly important with dry processed like this Koratie, since the cherry pulp remains in contact with the beans throughout the entire drying stage and will define the flavor of the coffee in its final form. The result in the cup is blueberry-like sweetness, without any of the funkiness that can sometimes occur in dry-processed coffees. Other cuppers detected ripe peach, pineapple and melon. In short, one of the best dry processed Ethiopians we’ve seen in quite a while.
