This
is the most spectacular dry-processed coffee from Ethiopia we’ve
ever had in our line up. It’s grown at 1900 meters by small holder
farmers who harvest local “wild” coffee varietals in the
Aricha locality, inside Ethiopia’s famed Yirgacheffe growing region.
What makes it so special? The hard work and meticulous attention to
detail inspired and organized by Abdellah Bagersh and his family. Mr.
Bagersh has developed a beautifully efficient system that pays farmers
a premium for harvesting only perfectly ripe coffee cherries. Ripeness
is measured in the field according to sugar content (brix) and harvesting
begins as soon as the cherries are at their peak. Harvested lots are
then dried on rasied beds under a unique “S-curve” system
which monitors bed depth and drying time to ensure the cherries dry
perfectly without any trace of ferment. What we end up with in the cup
is deep fruit flavors, usually expressed as ripe strawberry or blue
berry, a gentle sweet acidity with a creamy mouthfeel that lasts from
hot to cool. This is a coffee that everyone should try at least once
in their lifetime.
