The Moredocofe farm and mills are operated by Haile Gebre and his family in the Guji provence near the Kenya border. Ethiopia is coffee’s birthplace, and wild native trees (“forest coffee”) still grow abundantly in the fertile latosol soils of the Sidamo forests. The Gebres harvest from these wild trees as well as from those they plant carefully under the traditional forest canopy. The Moredecofe operation exemplifies coffee’s role as perhaps the most suitable crop for sustainable farming in this sensitive ecosystem. Alternatives in this region, such as corn, sorghum and cattle farming, all require full sun for healthy yields and have historically been the main driver behind the slash and burn agriculture that has plagued much of Africa. Native coffee trees, however, are perfectly happy under the shade of a hundred foot tall mahogany tree, and this is exactly how Haile likes to see his coffee growing. The farm is both organic and Rainforest Alliance certified.
Equally important for the Moredocofe operation is the meticulous harvesting of ripe cherries, additional pre-pulp sorting, extra thorough washing techniques and uniform raised bed drying. This attention to detail creates consistent quality from year to year and has helped earn this coffee the same quality designation as the best Yirgacheffes (as a result, it is often refered to as "high sidamo").
