A reason to get excited about decaf! Earlier this year we sent 40 bags of Finca Santa Isabel to be decaffeinated at the Swiss Water plant up in Vancouver and we are very happy with the results! It goes to show that when you start with a seasonally fresh and high quality coffee, you can retain the integrity of the original coffee (most decaf tastes horrible because is derived from old and/or low grade coffee to begin with). Although it is ever so slightly softened, the true character of this Finca Isabel comes through beautifully in the cup.
